Work closely with the Chef De Cuisine to conceptualise and develop innovative and diverse menus that cater to both regular dining settings. Incorporate seasonal and locally sourced ingredients while ensuring a balanced and appealing range of dishes.
Assist in the day-to-day management of kitchen operations, including food preparation, cooking, and plating. Ensure that all dishes are prepared to the highest standards of quality, taste, and presentation.
Lead, train, and mentor the kitchen team, fostering a culture of continuous learning and professional development. Provide guidance on culinary techniques, time management, and kitchen safety practices.
Work diligently to maintain the hotels reputation for excellence by consistently meeting and exceeding Forbes and Leading Quality Assurance (LQA) standards. Ensure that food quality, taste, and presentation align with the hotels luxury and lifestyle brand.
Collaborate with the Chef De Cuisine and the procurement team to manage inventory levels, control costs, and minimise waste. Monitor stock levels of ingredients, supplies, and equipment to support efficient kitchen operations.
Prioritise guest satisfaction by promptly addressing any special requests, dietary requirements, or concerns related to food quality. Collaborate with front-of-house staff to ensure a seamless dining experience for guests.
Enforce strict adherence to food safety and hygiene regulations. Maintain a clean and organised kitchen environment, conduct regular inspections, and implement corrective actions when necessary.
Contribute creative input to menu development, introducing new dishes, techniques, and presentations that excite and delight our guests. Stay current with industry trends and culinary innovations to bring fresh ideas to the table.
Foster open and effective communication within the kitchen team and across other hotel departments. Coordinate with servers and other relevant staff to ensure consistent quality and presentation of dishes.
Assist the Chef De Cuisine in administrative tasks such as scheduling, performance evaluations, and reporting. Step in as needed to fulfill the responsibilities of the Chef De Cuisine in their absence.
Proactively identify areas for improvement within kitchen operations, processes, and staff performance. Implement strategies to enhance efficiency, quality, and guest satisfaction.
What Were Looking For
Proven experience as a Sous Chef in a luxury 5-star hotel or beach operation restaurant setting.
Pre-opening experience is advantageous, showcasing the ability to set up kitchen operations smoothly.
Strong leadership and interpersonal skills to effectively manage and inspire the kitchen team.
Familiarity with Forbes and Leading Quality Assurance (LQA) standards is advantageous, demonstrating a commitment to exceptional quality and service.
Culinary degree or equivalent qualification from a reputable institution.
In-depth knowledge of culinary techniques, food presentation, and international cuisines.
Thorough knowledge of HACCP (Hazard Analysis and Critical Control Points) principles and practices to ensure food safety and hygiene.
Ability to work under pressure, manage multiple tasks, and maintain composure in a fast-paced environment.
Strong organisational skills to manage inventory, control costs, and ensure timely execution of food orders.
Flexible schedule, including weekends, evenings, and holidays, to accommodate the operational needs of the hotel.
Impeccable communication skills, both verbal and written, with fluency in English. Proficiency in additional languages such as Arabic, German, Italian, French, Spanish, Russian, and Mandarin is advantageous.
