Key Responsibilities
Lead, mentor, and manage the In Room Dining kitchen team, fostering a culture of collaboration, creativity, and excellence in culinary execution.
Oversee the day-to-day culinary operations of the In Room Dining operation, ensuring the highest level of food quality, presentation, and consistency.
Create and innovate menu offerings that resonate with the hotels target clientele, balancing local flavours, global culinary trends, and dietary preferences.
Collaborate closely with the Executive Chef and Sous Chefs to develop and refine recipes, ensuring they align with the hotels culinary philosophy and brand standards.
Implement and enforce standardised recipes, portion sizes, and plating guidelines to maintain consistent guest experiences.
Monitor kitchen activities, including food preparation, cooking, and plating, to maintain an efficient workflow and minimise wait times.
Ensure all food products are of premium quality, adhering to the strictest hygiene and sanitation standards.
Oversee inventory management, including ordering ingredients and supplies, managing stock levels, and controlling food costs.
Conduct regular training sessions to enhance the teams culinary skills, including techniques, plating aesthetics, and presentation styles.
Coordinate with the front-of-house team to ensure seamless service delivery, timely communication, and addressing guest feedback promptly.
Drive creativity and innovation within the culinary team, encouraging members to participate in brainstorming and menu development.
Foster a positive and inclusive work environment, addressing any staff concerns or performance issues in a timely and effective manner.
Participate actively in menu tastings, pre-service meetings, and other relevant culinary discussions.
Collaborate with the Executive Chef to create special menus for events, promotions, and private dining experiences.
Maintain up-to-date knowledge of industry trends, new ingredients, and innovative cooking techniques, integrating these insights into menu development.
Lead by example in maintaining a clean, organised, and well-equipped kitchen area, adhering to safety and cleanliness protocols.
Contribute to achieving and surpassing financial targets by managing food costs, portion control, and waste reduction initiatives.
Requirements
What Were Looking For
Culinary degree or equivalent professional experience.
3 to 5 years of proven experience as a Chef De Cuisine or a similar role in a luxury hotel or fine dining establishment.
Pre-opening experience is advantageous.
Fluent in English, both written and spoken. Proficiency in additional languages such as Arabic, German, Italian, French, Spanish, Russian, and Mandarin is advantageous.
Familiarity with Forbes and LQA (Leading Quality Assurance) standards and processes is advantageous.
Exceptional leadership skills with the ability to inspire and motivate a diverse culinary team.
Strong organisational and time-management skills, with the ability to handle multiple tasks simultaneously.
Creativity and a passion for culinary arts, demonstrated through innovative menu creations and presentations.
Strong knowledge of international cuisine, culinary techniques, and food trends.
Thorough knowledge of HACCP (Hazard Analysis and Critical Control Points) principles and practices to ensure food safety and hygiene.
Exceptional attention to detail and commitment to maintaining the highest standards of food quality and presentation.
Strong problem-solving skills and the ability to adapt to dynamic operational environments.
Excellent interpersonal and communication skills to foster teamwork and collaborate effectively with colleagues across departments.
